How to use tower_ee_extra_volume_mounts with custom ee and pvc

Hello,

Has anyone got a write up on how to use the tower_ee_extra_volume_mounts with a pvc for a custom ee? I am struggling to get it working correctly, I would like to mount a directory that has configs/artifacts when executing a job.
