I’m quite sure to ask for something that has already been discussed many times, but is there an easy way to upgrade my AWX installation to the latest one ?

You should mention which version you currently have and how it's installed, to get a good answer!
But also... try the latest version somewhere else first. The user interface is moving to a new style currently, and you might not want the partially-done current one. I think 15.0.1 is the last of the old style, and 16.0.0 onwards are the new one. It looks like it will be nice, but some things that used to have UI currently are either API only or a box full of JSON until it is completed.
As a warning AWX is not insuring compatibility when upgrading. Most of the time is is ok but sometimes you lose all your configurations and have to do it from scratch again.
If you need to ensure compatibility between upgrades and if you can afford it you have to go for tower instead.
That’s true. However there are roles such as redhat-cop tower configuration that allow you to treat your tower configuration as code. I don’t touch any of my tower resources anymore by hand. I just use a yaml data structure and pass it to the playbook. Then I just upgrade and run playbook. 2 minutes later I have my old configs back
