xml file as template

Is there a way I can make xml file as template?

i have the following file content

${LOG_DIR}/my-service.log >${LOG_DIR}/my-service.%d{yyyy-MM-dd}.log

The value in RED wil lchange depends upon env, when i addded this content as jinja2 template it failed
Any ideas please?
