You may want to use variable_start_string https://docs.ansible.com/ansible/latest/collections/ansible/builtin/template_module.html#parameter-variable_start_string

and variable_end_string https://docs.ansible.com/ansible/latest/collections/ansible/builtin/template_module.html#parameter-variable_end_string
